Easy veggie scrambled eggs

We all are looking for that easy breakfast camping hack and here at Lehigh Gorge Campground, we think we've found it. It's essentially, an egg scramble. What makes this the best? You can completely customize it to your taste buds, while everything can be pre-assembled at home.
Easy Veggie Scrambled Eggs:
Ingredients:
- Cherry Tomatoes
- Yellow Onion
- Green Bell Pepper
- Baby Bella Mushrooms
- Scrambled Sauage if desired
Prep at Home
Step 1: Dice the tomatoes, onions, peppers and slice the mushrooms
Step 2: Crack the eggs into a screw-top Rubbermaid container (not glass, as it can break in the cooler!!!)
Step 3: Place all of your desired spices into a small snack baggie
At the campsite:
- sautee the veggies in the pan with some butter
*adding butter to the pan will prevent the proteins from the eggs from sticking, making for a wipe the pan clean up)
- once the veggies are tender (about 5 minutes), add the pre-cracked eggs and spice blend from the baggie
- scramble the eggs with the veggies and spices and serve
Option: Add Bacon or Sausage on the side
